Method

  1. Line a 20 cm square tin with baking paper, leaving some overhang so the slab lifts out.
  2. Warm the peanut butter and maple syrup in a small saucepan over low heat, or for 30 seconds in the microwave, and stir until smooth and runny.
  3. Stir in the vanilla and salt.
  4. Mix the Lupin Gold protein and oats in a large bowl, pour the peanut butter mixture over and stir into a thick dough. Add milk a tablespoon at a time until it holds together when pressed.
  5. Press the dough firmly and evenly into the tin with the back of a spoon or the bottom of a glass.
  6. Pour the melted chocolate over the top and spread it thin.
  7. Chill for at least 2 hours until firm, then lift out and cut into 12 bars with a warm knife.

Why Lupin Gold works in protein bars

Most homemade protein bar recipes lean on a flavoured protein powder, which can make the whole bar taste of it. Lupin Gold is unflavoured, one ingredient and about 90% protein, so these taste of peanut butter, oats and chocolate.

The 100 g in this batch adds about 90 g of protein, which is most of the protein in each bar.

Swaps and tips

Vegan: use a plant milk and a dairy-free dark chocolate. Everything else in the recipe is already plant-based.

Crunchier: swap 50 g of the oats for chopped roasted peanuts or puffed rice.

Too dry? Add milk a tablespoon at a time. Too sticky? Add a tablespoon of oats.

Storage: keep the bars in an airtight container in the fridge for up to a week, or freeze them and take one out the night before.

Allergens: contains lupin and peanuts, plus milk if you use dairy milk. See our allergen information.
